Alpaca Awesome Chili

Healthy comfort food for a tasty way to keep your New Year's resolution in February. Pair with cornbread or a baked potato for a full warm belly.

Prep Time: 10 minutes

Cook Time: 1 Hour

Makes: A lot. Bring to a potlock or freeze portions to reheat on snow days.

1 lb Ground Alpaca

1 lb Alpaca Chorizo (casing removed)

2 green bell peppers diced

2 red onions diced

2 cans diced tomatoes

3-5 cloves garlic pressed (we like garlic a lot...)

2 cans red beans drained

2 cans black beans drained

1 Tbsp green chili powder

1 can beer (whatever you have on hand. We usually make this in the morning to make sure we still have some on hand...)

1 packet chili seasoning

1 cup water

Salt & pepper to taste

Brown meat in a stock pot. Drain meat in colander. Cook garlic, peppers, and onions in the pot. Add meat back to the pot. Cook for 2-3 minutes. Add chili seasoning (both kinds). Stir until coated. Add the rest of the ingredients. Cook on low for approximately one hour, stir occasionally. Add a sprinkle or two of flour for thicker chili. Can be made with dried beans as well: simply re-hydrate them by letting sit in water overnight.
